Mongolia inverts how you plan. There is 1 real city, and beyond it a country twice the size of France with almost no towns, no hotels and famously few paved roads, which means the unit of travel is not the destination but the journey: a driver, a guide, ger camps and a loop booked as one piece from Ulaanbaatar. The choice that matters is which loop, and for a first trip the answer is the southern one, down through the Gobi's dunes, ice canyon and dinosaur cliffs.
